Garlic is planted in the fall (usually October around here), and then begins growing early the next spring. Garlic scapes are the flowering stem of garlic, which can be used to add a garlic flavor to whatever you are cooking that needs garlic (everything, right?).
Here are some suggestions for uses of garlic scapes.
If you make a pesto of it (in the link above), you can put the pesto into ice cube trays to freeze, then pop them out and put them in a freezer bag. This makes them easy to add to sauces all year long.
